to 6 cloves garlic (to taste)3 pieces
chopped red onion2 tablespoons
fresh flat-leaf parsley (firmly packed)2 cups
fresh cilantro, optional0.25 cup
fresh oregano leaves (or 1 teaspoon dried oregano), optional0.25 cup
lime juice  (or to taste)1 tablespoon
red wine vinegar (or to taste)2 tablespoons
to 3/4 cup olive oil0.5 pieces
Kosher salt (to taste)1 pieces
Red pepper flakes (to taste)1 pieces

Method

Gather the ingredients.

In a food processor, pulse 3 to 6 coarsely chopped garlic cloves and 2 tablespoons coarsely chopped red onion until they are finely chopped.

Add 2 cups coarsely chopped fresh flat-left parsley , 1/4 cup coarsely chopped fresh cilantro (optional) , and 1/4 cup coarsely chopped fresh oregano (or 1 teaspoon dried oregano), as desired. Pulse briefly, until the herbs are finely chopped.

Transfer the mixture to a serving bowl.

Stir in 1 tablespoon freshly squeezed lime juice , 2 tablespoons red wine vinegar , and 1/2 to 3/4 cup olive oil .

Season with kosher salt and red pepper flakes to taste. Store in the refrigerator, covered, until ready to serve.
