Soju Mojito

club soda (splash - up to 4 oz)1 pieces

Method

In a cocktail shaker or sturdy tall cocktail glass cup, add the mint leaves and lime juice. Then using a muddler or wooden spoon, smoosh or 'muddle' the mint leaves.

To the muddled mint leaves + lime juice, add soju, simple syrup (or maesil syrup OR sugar), a handful of ice and shake if it's a cocktail shaker or just mix with a long spoon if it's a cup.

Strain into a glass filled with ice and top with a splash of club soda. Garnish with a sprig of mint and lime slices.
