gunpowder green tea2 tsp
water2.25 cups
orange blossom water1 tsp
big handful fresh spearmint (20g) (- extra for garnish)1 pieces
sugar, honey, or stevia (- to taste, optional)1 tbsp

First collect or buy some mint and shake it free of dirt and bugs. I find that rinsing (even under cool water) removes some of its delicate flavor, but do as you think fit. Add the green tea in a small pot along with the water. (Or if you have a tea kettle, use that!) And bring to a boil.

Once boiling, turn the heat off and add the orange blossom water, followed by the mint. You can also add the sugar now if you want the whole batch to be sweet. Put the lid back on, and let steep for 5 minutes — or more if you like a very strong tea.

Now get a whiff. If it smells nice, try pouring out a small amount. Carefully taste and decide if you want to give it more time. (I found 5 minutes to be just right.) When satisfied, pour some out into a small glass cup, then pour the contents back in the pot, and repeat once. This will oxygenate the tea and bring out more flavor.

Finally, strain in a pitcher for easy pouring and fill individual cups. Traditionally, this is done raising the teapot (or pitcher) as high as you can to oxygenate the tea some more — and show off a little. You will see a little foam forming, that’s a good sign! Enjoy with honey, sugar, stevia, or as is. Garnish with a fresh mint sprig if desired.
