
Kjøttkaker - Norwegian meatballs
Traditional Norwegian kjøttkaker are all beef, flavourful, somewhat salty, served with gravy.

Method
In a medium mixing bowl, add corn starch, flour, and spices: salt, pepper, paprika, and nutmeg. Optional: add 1/4 tsp ground ginger.
Add milk and whisk together until smooth.
Add ground beef to the milk and spice mixture and stir with a spoon until completely combined and sticky.
Heat a frying pan to medium-low heat and add oil or butter.
Shape the meatballs using a meatball scoop or two spoons, dipping in cold water to prevent sticking.
Drop the meatballs gently onto the frying pan and flatten them slightly with a water-dipped turner.
Cover the frying pan with a lid and fry for 3-4 minutes until browned underneath.
Flip the meatballs and fry the other side with the lid on until cooked through.
If necessary, fry in two batches, keeping the first batch covered and hot.
