Juice of 2 limes1 pieces

For the Sauce:1 pieces
olive oil3 tbsp
garlic, minced4 cloves
green bell pepper, sliced1 pieces
red bell pepper, sliced1 pieces
large onion, sliced1 pieces
large tomatoes, diced2 pieces
tomato paste2 tbsp
dried thyme1 tsp
¼ cup chopped parsley1 pieces
Scotch Bonnet pepper, seeded and minced (optional)1 pieces
water (or homemade fish stock for enhanced flavor)1 cup
Salt and pepper to taste1 pieces

Method

Clean the fish with lemon juice and cold water. Pat dry.

Marinate Fish: Combine fish fillets with lime juice, salt, and black pepper. Add Epis. Let marinate for 15-30 minutes.

Sauté Aromatics: In a large skillet, heat olive oil over medium. Add garlic, bell peppers, and onion, cooking until soft.

Build Sauce: Mix in tomatoes, tomato paste, thyme, parsley, and Scotch Bonnet pepper. Cook for 5 minutes.

Simmer Fish: Place marinated fish into the skillet, adding enough water to cover the fish halfway. Season with salt and pepper. Cover and simmer for 15-20 minutes.

Serve: Place fish on plates, top with sauce, and garnish with parsley.
